I used to count down the days until Starbucks would release its seasonal pumpkin spice latte. I can no longer stomach the sweetness of that beverage, though, and have created something that, in my opinion, perfectly encapsulates Fall in a glass (or teacup, as I prefer to drink it).
As the weather gets colder, I find myself modifying my juices to include “warmer” flavors and ingredients. Sweet potato juice is my new favorite, adding it alongside carrots and ginger. I was delighted at the amount of juice that a sweet potato actually yields. The consistency is a bit creamy and thick, making it reminiscent of a smoothie, and making it feel a little more substantial.
Sweet Potato Pumpkin Spice Juice
-2 large sweet potatoes
-4 medium carrots
-1 red apple
-inch of ginger
-1 tsp cinnamon
-Drink in a pretty teacup or your favorite holiday mug to make this juice festive and feel indulgent. Juice is a luxury and can be joyful, not a deprivation!
